Sweet Potato Soup 

 

You can’t beat a warm, creamy and hearty soup in winter. This gorgeous silky smooth and creamy sweet potato soup was inspired by another vegan chef online. 

I wanted to create a vegan soup that looks and tastes amazing! And this soup ticks all those boxes. It’s a very easy recipe and can be made in under 30 minutes, which always a win when you have a family to cook for. 

I am not a huge fan of soups, but this one is definitely worth making! 

Ingredients

2 cups of cooked sweet potato 

1 cup of cooked white potato 

2 tablespoons vegan butter 

1 teaspoon salt 

1 teaspoon pepper 

1 teaspoon turmeric 

1 teaspoon paprika 

1/2 cup of nut milk

Method

  1. Add all cooked ingredients to a blender and blend until smooth and creamy. 
  2. Do not over blend as you can activate the starch too much and it becomes gluey.
  3. Serve with freshly toasted bread and fresh herbs
