Sweet Potato Soup
You can’t beat a warm, creamy and hearty soup in winter. This gorgeous silky smooth and creamy sweet potato soup was inspired by another vegan chef online.
I wanted to create a vegan soup that looks and tastes amazing! And this soup ticks all those boxes. It’s a very easy recipe and can be made in under 30 minutes, which always a win when you have a family to cook for.
I am not a huge fan of soups, but this one is definitely worth making!
2 cups of cooked sweet potato
1 cup of cooked white potato
2 tablespoons vegan butter
1 teaspoon salt
1 teaspoon pepper
1 teaspoon turmeric
1 teaspoon paprika
1/2 cup of nut milk
- Add all cooked ingredients to a blender and blend until smooth and creamy.
- Do not over blend as you can activate the starch too much and it becomes gluey.
- Serve with freshly toasted bread and fresh herbs
