Vegan Kimchi Pancakes

Kimchi pancakes

I am loving these vegan kimchi pancakes as I am not a sweet tooth and love eating savoury breakfast. Sweet things for me have just never been something I crave. If you have not tried these don’t know them until you eat them. With a light, fluffy pancake texture combined with a savoury flavour, they are so good in this cold weather right now. 

 

Serves: 2 

Skill: Easy 

Makes: 6 

Ingredients 

1 cup of self-raising flour 

1 cup of water 

pinch of salt 

1 teaspoon of turmeric 

1 teaspoon of paprika 

1/4 cup of nutritional yeast 

1 tablespoon of sliced spring onion 

2 tablespoons of kimchi 

2 teaspoon of vegan butter or coconut oil 

Method:

1. Using a large mixing bowl place flour, water, nutritional yeast and spices in the bowl. Use a whisk and mix well

2. Then add in the onion and kimchi, stir through. You should have a nice thick yogurt like batter

3. Let batter rest for 15 minutes at least to help relax the gluten to give you a nice fluffy pancake

4. Once well rested. Heat a large frying pan with one teaspoon of coconut oil or vegan butter to medium heat

5. Spoon in 3 x 8cm round pancakes to the pan and place a lid over the top of the frying pan. Cook for 4 minutes per side

If they are cooking faster than this turn the pan down and cook on a lower heat

Once all cooked remove and serve with your favourite hummus and Avo
