Vegan Crumpets

Wow, I am so happy how these little rippers turned out. So sweet, sticky and fluffy. When I was a child growing up occasionally, mum would buy us crumpets, and I loved them with butter, honey and a squeeze of lemon. Well, I can tell you these vegan versions are way better than any store bought packet crumpet you will find. Move over pancakes. I have a new best friend. Crumpets!


400 ml of nut milk

1 tablespoon of dried yeast

2 teaspoon of maple syrup 

300 g of strong white flour

½ teaspoon bicarbonate of soda

2 tablespoons of vegan butter 


1. Start by gently warming the nut milk 

2. Then in a large mixing bowl dissolve the yeast in the warm nut milk, maple syrup and 100ml of tepid water

3. Leave in a warm place for 15 minutes, or until frothy

4. After 15 minutes sift the flour, bicarbonate of soda and one teaspoon of fine sea salt into the yeast mixture

5. Whisk until the consistency of double cream – this will take a few minutes. Add a splash more water, if needed

6. Place a damp tea towel over the bowl and set aside in a warm place for 45 minutes or until little bubbles form on the surface

7. After 45 minutes place a medium frying pan on medium-low heat

8. Add 1 tablespoon of vegan butter to the frypan and melt. Then start by adding medium size spoonfuls of the mixture to the pan

9. You should get around four into a medium to large fry pan. Cook for 5 minutes, or until little bubbles appear on the surface

10. Once the bubbles have burst, leaving tiny holes, flip over the crumpets over, then cook for 1 minute on the other side 11. Add more butter to pan if need be and repeat with the rest of the mixture

12. Serve the crumpets warm, with a slather of vegan butter, maple syrup and fresh lemon 

Tip: If making them in advance, toast lightly again on both sides when you come to serve them later.

And I found the first batches formed nice bubbles on the surface, and the last quantities seem to lose the bubbles. You could split the batter into 2 bowls after you do step 4. This could help keep the bubbles. Please leave any comments on how yours turn out
