Vegan blueberry scones

This is a super easy quick recipe you can make anytime the day or night. This scone recipe is my old dairy recipe converted with the easy swap out of butter for a vegan version.

Vegan blueberry scones are so tasty! and I love the burst of flavour with the berries through all the scones. I hope you enjoy the recipe and comment below 🙂

2 cups of self-raising flour

1 teaspoon of baking powder

1/2 a teaspoon of salt

70g of vegan butter

3/4 cup to  1 cup of nut milk – I use cashew

1 cup of fresh blueberries

  1. Mix all dry ingredients together
  2. Then add the vegan butter and using your hands rub the butter through the flour, until you have only small lumps
  3. Now add in the nut milk and berries, lightly bring the dough together being careful to not overwork the dough
  4. Once it’s come together, place on a lightly floured surface and press into a large round even piece, about 2 inches thick
  5. You know your dough is right if all comes together and it’s not sticking to your hands or breaking apart
  6. Then cut out scones with a floured cookie cutter or the end of a glass works well
  7. Place all scones on a large baking tray lined with baking paper and bake at 180 for 15 to 20 minutes or until golden
