Sweet potato & spicy chickpea tacos

Ingredients

1 sweet potato
Spicy Chickpeas – See recipe by clicking here
1 teaspoon of paprika
1 teaspoon of cayenne pepper
1/2 teaspoon turmeric
1 tablespoon olive oil
Salt and pepper to season
3 soft taco shells
1/4 cup of diced pineapple
1 tablespoon of sliced green onion
1 tablespoon chill sauce
2 tablespoons of natural coconut yoghurt
1/4 cup of shredded red cabbage

Method

  1. Start by heating the oven to 180 degree
  2. Slice the potatoes into 2cm thick rounds and sprinkle with cayenne, paprika, turmeric. Lightly brush with olive oil and bake for 30 minutes until tender
  3. Remove from the oven once cooked and allow to cool
  4. After the potatoes are cool you can dice them up
  5. Now you are ready to start on tacos, place them in a 180-degree oven to warm for 5 minutes
  6. Once warm remove and place on a plate ready to fill
  7. Add your red cabbage to the base, top with sweet potatoes, chickpeas, natural yoghurt, green onion and pineapple
  8. Top with your favourite chill sauce and enjoy!
