Sun-dried tomato pesto

Easy raw sundried-tomato pesto 

 

 

Ingredients 

1 cup soaked sun-dried tomatoes (soaked for 4-5 hours)

2 medium tomato, de-seeded and roughly chopped

2 tablespoon diced red onion 

2 teaspoon lemon juice

¼ teaspoon salt

¼ teaspoons red chilli flakes

1 red capsicum, seeded and chopped

2 teaspoons olive oil

1/4 cup of green olives 

 

Method 

Place all ingredients into a food processor and blend until a paste form – Use with my sundried tomato and sweet potato quinoa recipe 

Will last in the fridge for a week
