Smashed Roast Potatoes

Ingredients

8 smallish white potatoes
2 tablespoon vegan butter
1 teaspoon paprika
1 teaspoon of dried parsley
1/2 teaspoon turmeric
1 teaspoon garlic powder
1 tablespoon of nutritional yeast
Salt and pepper to season
Juice from 1 lemon

Method

  1. Start by placing a large saucepan filled with water on high heat
  2. Add the white potatoes to the pot
  3. Bring to a boil and cook for around 20 minutes. You will know they are ready when you can pierce them with a skewer
  4. Once ready, remove from heat and drain off water
  5. Now add the vegan butter to the pot with salt and swirl around until all potatoes are evenly coated with butter
  6. After this get a flat baking tray out and line with baking paper
  7. Place the potatoes on the tray with a few cm’s between each potato
  8. Using a potato mashed gently press down on each potato until you squash down to around half the original size
  9. Then sprinkle with all dry spices and herbs
  10. Place in a preheated oven set to roast at 200 degrees for 20 minutes. Or until golden brown and the tops are a little crunchy
  11. After they are baked remove and sprinkle with fresh parsley, add your favourite mayo and freshly squeezed lemon juice
