Friday quick Meatless Spaghetti 😋

Easy peasy super quick spag bowl. This is our go-to lazy meal during the week. When my hubby and I can’t be bothered to cook we make this 😍

You’ll need
Garlic, cumin, TVP, Jamie Oliver tomato & chill jar sauce, tamari, nutritional yeast, tomato purée, herbs 🌿 if you have them, pepper and chilli
Start by adding some oil to a frying pan on medium heat, add 1 tsp cumin, 1 cup TVP and fry for 1 minute then add 3 garlic cloves diced, tamari 1 tsp, tomato purée, and fry for another minute.
Now add the sauce and 1 1/2 cups of water with nutritional yeast 1/4 cup. Stir through and simmer until you have a thick sauce. Around 10 minutes to cook the TVP.
You may need to add a little more water 💦
Taste, add some pepper any other spices you might like, a bunch of herbs and serve with spaghetti 🍝
We like to shave nuts over the top instead of cheese 😋

Quinoa & Sweet potato patties with chilli butter 🤤

These tasty little gems were whipped up with some leftover veg and quinoa. One of the best parts about eating plant-based is your leftovers are always so fun to recreate a new dish the next day.
To make these I added about 1 cup of sweet potato mash, 1 cup of cooked quinoa, fresh herbs, a few spices, cumin, salt, pepper, paprika and garlic. Then I used some breadcrumbs to bind them. Lightly pan-fried with a non-stick pan, no oil needed. And served with a chilli vegan butter 🤤

What do I eat as a vegan for breakfast? Turning vegan has actually made me way healthier, as I now eat tons of variety of fruits and veggies. On the weekends I like to have a big cook up.

🌿Roasted baby tomatoes with red capsicum herbs and garlic
🌿Mixed mushrooms, spinach, garlic and tofu scramble with black salt. Taste exactly like eggs! Tip: add the salt when you serve
🌿Mixed fruit and berry platter a household standard for my hubby and me daily
🌿Chia puddings - banana walnut and blueberry 🫐 Chocolate & peanut butter
🌿 Zucchini fritters with mint
🌿 Roast mixed potatoes with my special spice rub😋
🌿Cold press juice
Breakfast is my favourite meal to cook and eat. It’s just a matter of changing the way you think. Get up a little earlier in the morning ☀️ Enjoy the beautiful gift of life and prepare a healthy meal

I’m back from last weeks incredible cooking retreat! Wow 🤩 What an awesome group of people I had over three days. Our house was stunningly located on Toby’s inlet just behind the beach 🏝
We had our own little rowboat to cruise across to the beach while taking in the beautiful fresh ocean 🌊 air

Thank you to my awesome crew, I feel blessed to share my passion with such lovely people everyday and these retreats are the perfect way to pack in loads of recipes and lessons in. While having a holiday 🥰 With everyone
