Coq au Vin - Vegan Version 👌🙌 A French dish

Coq au Vin - Vegan Version 👌🙌

A French dish made traditionally with chicken braised with red wine, mushrooms and garlic.

This version uses banana blossom over chicken.
Creating a perfectly heavenly vegan dish!

Serves 4 Difficulty Easy Time 1 hour
2 tbsp of olive oil
1 small onion, diced fine
4 vegan bacon rashers, diced
2 bay leaves
1 cup of mushrooms, chopped
4 garlic cloves, diced
1 carrot, diced
4 large sprigs of thyme
1/4 cup of cognac
1 tsp of balsamic vinegar
1 tbsp of tomato paste
1 tbsp of smoked paprika
1 can of banana blossom, drained and rinsed
1 cup of red wine
1 tbsp of flour
1 cup of vegan chicken stock liquid
Salt and pepper to season
Method
1. Add the oil to a dutch oven or heavy-based saucepan, add onions and cook on medium heat for 5 minutes.
2. Add the vegan bacon, bay leaves and mushrooms. Cook until bacon and mushrooms turn
Golden. Add the garlic, carrots, thyme, cognac, balsamic, tomato paste, smoked paprika, and
banana blossom. Stir through and cook off the alcohol for 1 minute.
3. Next, add in the red wine, flour, and vegan chicken stock and bring to a simmer
4. Cook for 20 minutes to thicken and reduce the sauce.
5. Taste and adjust seasoning. Serve with creamy mash and fresh thyme leaves.

Unfortunately for the next 6 weeks, not including this weekend. I will be putting classes on hold.

Last week I was diagnosed with bowel cancer…. Yep! That word you never want to hear. Unfortunately, this means surgery next week with a 6/8 week recovery time.

Thank you to my family and close friends for your incredible support over the last week.
