NEW RECIPE - Sticky Date Sponge Cake!

Who loves sticky date pudding🙋‍♀️

This is one of my favourite desserts. This is the one dessert I will always try😋

This is my version of a sponge-like sticky date cake! It’s super soft and delicate with a chewy top.

Enjoy with your favourite vegan ice cream or caramel sauce

1½ CUPS CHOPPED PITTED FRESH DATES
1 CUP OF BOILING WATER
1 TEASPOON BICARB
100G NUTELLEX
1/2 CUP BROWN SUGAR
1 CUP OF OAT MILK
1 CUP SELF-RAISING FLOUR
50G NUTELLEX, EXTRA
1 CUP OF BROWN SUGAR, EXTRA
1¾ CUP OF WATER
ICING SUGAR, FOR DUSTING

Method
1. Preheat the oven to 160ºC. Place the dates, water and bicarb in a bowl and allow to stand for a few minutes.
2. Place the date mixture, nutellex and sugar in a food processor and process until well combined. Add the flour, and oat milk and mix through.
3. Pour the mixture into a 2-litre-capacity baking dish and set aside.
4. Place the extra nutellex, sugar and the water in a medium saucepan over medium heat and stir until the nutellex is melted and the sugar is dissolved.
5. Gently pour over the pudding mixture. Bake for 40–45 minutes or until firm to touch.
6. Allow to stand for 10–15 minutes, and dust with icing sugar to serve. Serves 6 - 8
