This little sweet rhino is just one of the beautiful creatures that Ayarah helps. Ayarah adopted Maxwell recently and love getting our updates on his daily activities

Maxwell is blind but that doesn’t stop him from playing and charging around with all the animals at Sheldrick. We are so blessed to be able to help fund the care required to help protect Maxwell and the other orphans

What a wonderful weekend of cooking classes. Yesterday was all about creating stretchy vegan cheese that you can even melt🤤 Plus my traditional aged vegan cheese 🧀 and creamy vegan feta

Then at night we whipped up an Indian feast 🥳 And wow! seriously the rogan Josh the boys were in charge of. They totally nailed it

Due to the increasing demand for more classes. I have added another 3 through April March and May. Please don’t think
I’ll wait that’s too far away, as I getting weekly emails from people disappointed they didn’t book earlier

Then dipped in my yummy peanut satay sauce. Natural peanut butter, vegan fish sauce, lime juice, tamarind, chilli powder, garlic and water

Recipe
1 teaspoon of each dry spice, cumin, coriander, fennel seeds, paprika and pinch of salt and pepper. Mix well with chopped nuts, hazelnuts, pistachios, macadamias and sesame seeds. Serve with your favourites breads, olive oil and balsamic

18 days ago my hubby and I started planting seedlings in our greenhouse 😍
Oh my... it’s incredible! Everything is growing cms to inches per day!! Seriously if you don’t have one and your keen on keeping bugs and bird life off your veggies. Invest in one
.
Our little guy is around 2.4m by 6m and we need another!!
.
It’s so great to be able to grow organic veggies and herbs for my cooking classes
.

Just thought I’d share some images from today’s Vegan Italian cooking class. Definitely one of my favs to teach. Such a super class and everyone nailed their dishes👌

Here's one of my fav quick and easy midweek dinners! This is also a great dish to entertain with and takes less then 20mins👌
To men this you'll need
Eggplant, Breadcrumbs, Nutritional yeast, S&P, Olive oil, Frying oil, Tomatoes, Olives, capers, Basil, Cauliflower, Nutellex, Corn flour & Water
.
Start by chopping the cauliflower into small pieces and boil until tender. In the meantime, add some breadcrumbs to a large plate, add a good pinch of nutritional yeast and season with S&P. Then on another large flat dish, add 2 tablespoons of cornflour and 1/2 cup of water, mix. Then dip sliced 1cm thick pieces of eggplant into the cornflour batter, place straight into the breadcrumbs mix and coat both sides well, add to the side and complete with the rest of the eggplant. Now place a frying pan on medium heat with some frying oil, around 1 cm deep. Lightly fry each piece for 2 to 3 minutes per side until golden, remove and drain excess oil on paper towel. Repeat until complete😋 By this time the cauliflower will be cooked, remove from heat, strain and blend with 1 tablespoon of nutellex, season with S&P. Add some cauliflower puree to a plate, top with 2 eggplant pieces. Serve with fresh capers, diced tomatoes, olives, drizzle some olive oil and top fresh basil
