Who’s craving winter warm curries💁🏻‍♀️ with fluffy Naan bread?

Try this vegan version of Shahi Gobi, it’s perfect for this cold weather and great for all the winter cauliflower we have.

You’ll need
1 medium cauliflower cut into small florets
1 tablespoon of olive oil
Pinch of salt and 1 teaspoon of turmeric

Start by adding the cauliflower to an oven tray and sprinkle oil, salt, turmeric and place into a 200-degree oven for 20 minutes or until tender. Set to the side
While the cauliflower is roasting make the gravy.

Add 1 tablespoon of oil to a medium saucepan, add in 1 large onion diced - cook on low heat until lightly golden ( 10 minutes)
Next, add 6 cloves of garlic chopped, 2 tablespoons of ginger chopped, 1 teaspoon of garam masala, 1 teaspoon of cumin, 1 teaspoon of coriander, 1 teaspoon of chilli powder, 1/2 teaspoon of turmeric, 1/3 cup of tomato paste and cook for 2 minutes.
Add 1 cup of water and cook for another 10 minutes to reduce the liquid to a thick sauce. Remove from the heat and blend once cooled into a silky sauce.

Now, add the sauce to a frying pan, add 1 tablespoon of nutritional yeast, 2 tablespoons of raisins, 1/4 teaspoon of garam masala, and a pinch of salt to season. Stir through and cook for a few minutes. Next, add the cauliflower and 3/4 cup of vegan cream, stir through and cook until warm. Taste and add some lemon juice or salt to your liking.
Serve with cashews, coriander and rose petals optional 🥰 Naan recipe available in my Indian cooking class 😋

Sugar & Butter Free Cake!

Try this delicious melt in your mouth
Coffee & Cardamom Cake 😋

Lately, I’ve started playing around with recipes, that don’t use processed sugars or butters. The main reason is health.

1. Sugar is known to grow cancer cells. Meaning this is one major product I’ve removed permanently from my diet.
2. Vegan butter - although great for baking, unfortunately they are heavily processed and carry a lot of nasty unhealthy oils for your body.
You can replace butter with pure oil like cold press olive, avocado or grape seed oil are all better choices.

Here’s my recipe for this first attempt at this delicious cake 😋

1 1/2 cups organic flour
1 teaspoon baking powder
1/2 bicarbonate soda
1 teaspoon of cornflour
1 tablespoon lemon juice
1/2 a vanilla bean pod - scrapped ( seeds only)
3/4 cup of homemade oat milk
1/2 a cup of maple syrup or honey( best natural sources )
1/2 a cup of grape seed oil
1 teaspoon of cinnamon
2 teaspoons of cardamom
Tiny pinch of salt and ground coffee for the top of the cake

Method: Add all the dry ingredients into a large mixing bowl, toss the dry ingredients
Next, add the wet ingredients and mix until it comes together. Be careful to not over mix.
Pour into a greased 20cm shallow cake tin. Sprinkle the top with cinnamon and ground coffee.
Bake for 35 minutes at 175 degrees 👌
Once cooked, let rest for 5 minutes. Then remove from the tin and let cool for 1 hour before enjoying.
Best enjoyed within 2 days 💛
