Miso maple​ eggplant


1 medium eggplant 

1 tablespoon of miso paste 

1 tablespoon of tamari sauce 

1 teaspoon paprika 

salt and paper to season 

1 tablespoon maple syrup 

1/4 cup of chopped parsley 

2 tablespoons of almonds slices

2 tablespoons of cranberries 

1 cup of cooked couscous 

2 tablespoons of spicy chickpeas – See recipe by clicking here  


1. Start by preheating an oven to 180 degrees 

2. While the oven is heating prepare the eggplant. Slice the eggplant in half and remove about a 1com from each back so it lays flat on a baking tray 

3. Place on the baking tray and brush with maple, miso and tamari.  Sprinkle with paprika, salt and pepper 

4. Place in the oven and cook for 20 minutes 

5. While it’s cooking you can make the spicy chickpeas and couscous 

5. Once cooked remove and get ready to plate up 

6. Place a serve of couscous on the plate, top with one eggplant half, almonds, herbs, chickpeas and cranberries
