Meringue Kisses​


1 can chilled drained chickpea brine no salt added 

1 cup of white sugar

1 teaspoon of vanilla essence


1.Start by adding your chickpea brine to a clean stainless steel mixing bowl

2. Whip brine for around 5 minutes until nice fluffy peaks form – keep whipping until soft peaks form

3. Then slowly start adding the sugar into the bowl while on high speed

4. After about 4 to 5 minutes you should start to get very stiff peaks, if not keep whipping for another minute or two 

  1. You should now have strong peaks and be able to tip the bowl upside down without it falling out – if not. Keep whipping
  2. Once you have very stiff peaks place into a piping bag and pipe out small kisses onto a platter
  3. Using a kitchen hand held blow torch, lightly toast the edges
  4. Top with sliced almonds and serve
