Lime avocado mousse tart

Ingredients Crust 

2 cups of almonds 

1 tablespoon maple syrup 

1 tablespoon melted coconut oil 

1 tablespoon water 


  1. Start by placing the almonds into a food processor and blitz until you have a nice bread crumb like consistency
  2. Then add in the maple syrup, coconut oil, water and blend 
  3. The mixture should start to stick together
  4. Remove and press into a 20 cm tart tin evenly 
  5. Set in the fridge while you make the filling 

Ingredients Filling 

1 avocado 

1 cup of soaked cashews 

1/4 cup of lime juice 

1/2 a cup of melted coconut oil 

1 tablespoon maple syrup 


  1. Place all filling ingredients except the coconut oil into a blender and blend until smooth and creamy
  2. Add a little nut milk if its very thick 
  3. Add the coconut oil last the blend again 
  4. Pour the filling into prepared crust and set in the fridge for at least 6 hours to set
