Jack Fruit Nacho’s

Ingredients

1/2 cup of molasses

1 can of coconut milk

2 cans young green jackfruit drained

1 tablespoon of coconut oil

1 tablespoon of smoked paprika

1 teaspoon of paprika

1 teaspoon of cumin

1 teaspoon of coriander

1 teaspoon of garlic powder

1 teaspoon of chilli powder

1/2 a cup of fresh herbs chopped 

Juice of 1 lime ( 2 tablespoons )

Method

  1. Start by placing a large saucepan on medium heat with the coconut oil
  2. Then add your jackfruit into the pan and cook for around a minute. Now add all your dry spices and cook for another minute until sweet and fragrant
  3. Add the molasses and coconut milk to the saucepan and turn down to a low simmer
  4. Then simmer without a lid for around 45 minutes to one hour
  5. After approximately 30 minutes you can stir your mix and start to use a potato masher to break up the jackfruit
  6. Then leave for another 30 minutes, after that time you should be able to mash well and have an excellent pulled pork like consistency
  7. Once cooked add your fresh herbs, lime juice and stir through well. It’s now ready for your Nacho’s!

Nacho’s

Ingredients

1 500g bag organic nachos chips 

1 cup of guacamole

4 tablespoons of naked Byron Bay foods spicy mayo

1 cup of shredded red cabbage

1/2 green onion sliced thin

1/2 a cup of diced red capsicum

1/2 a cup of fresh coriander chopped

Method

  1. Preheat the oven to 180 degrees. Then place the corn chips on a large baking tray, top with jackfruit, onion, and capsicum
  2. Cook for around 10 minutes or until chips start to turn golden
  3. Remove from oven and top with red cabbage, guacamole, fresh herbs and mayo
  4. Then you’re all done and ready to enjoy
