Vegan Mushroom Calimari

Ingredients

2 oyster mushrooms sliced into rings

1 cup of plain flour

2 tablespoons of tapioca flour

1 teaspoon of salt

1 teaspoon of garlic powder

1 teaspoon of paprika

1 teaspoon of parsley

1 cup of water

1 cup of bread crumbs

2 cups of vegetable oil

Method

  1. Start by heating the oil in a deep saucepan to 180 degrees
  2. Then using an apple corer cut the centre out so they look like rings
  3. For the batter place the flour, tapioca, salt, paprika, garlic, and water into a mixing bowl and mix until you have a nice thick batter. Adjust water if you need
  4. Put the breadcrumbs onto a large plate
  5. Start by dipping the mushroom rings into the batter then remove excess and coat with bread crumbs
  6. Once your oil is hot enough to cook. Start frying the mushrooms in two batches and place on a paper towel once golden brown
  7. Enjoy with your favourite vegan tartare or mayo and sprinkle with parsley
