
Fig and Raspberry cups
Fig and Raspberry Breakfast Cups

These little fig and raspberry breakfast cups are super quick and easy to make. Chia seeds are loaded with omegas and great for helping improve our brain and focus throughout the day. Making this the perfect morning or afternoon snack.
Also, loaded with fibre, antioxidants and flavour. You can change them up with different berries and fruits to change with the seasons too.
Ingredients
1/2 a cup of chia seeds
1 & 1/2 cup of coconut milk
1 teaspoon of vanilla extract
6 fresh figs quartered
1 cup of fresh raspberries
2 tablespoons of hemp seeds
Method
1. Place chia seeds, vanilla, coconut milk into a large bowl and mix
2. Then place in the fridge and sit in for 30 minutes to soak and absorb the coconut milk
3. Remove from fridge and using a whisk break up the seeds, as they may have clumped a little in the fridge
4. Then once absorbed and mixed well. You will have a nice thick yoghurt-like consistency
5. Using 6 water glasses you can start to layer with chia mixture
6. Fill about 1/3 full, add fresh fig quarters, hemp seeds and raspberries. Place in the fridge and enjoy anytime during the day
Lasts 4 to 5 days in the fridge
