Stuffed Bell Peppers

2  yellow bell peppers

1 cup black rice cooked

4 medium button mushrooms chopped into small pieces 

1/2 a green onion sliced thin

1/4 cup raisins 

1/2 cup flaked almonds 

Pinch of cayenne pepper

1 teaspoon garlic powder

1 teaspoon paprika 

Salt and pepper to taste

1/4 chopped parsley

2 tablespoons of smoked almond vegan feta 


  1. Preheat the oven to 180 degrees
  2. Prepare a medium-size baking tray to place your peppers on. Start by cutting the top off the bell peppers and putting the head to the side
  3. Use a spoon to scoop out the inside ribs and seeds (the white part of peppers) So you have a beautiful size space inside to place the ingredients into
  4. Then using a medium size bowl place you rice, spice, mushrooms, onion, nuts, parsley, salt and pepper and mix well
  5. Scoop the mixture into the peppers and top with almond feta. Place lid gently on top and put in the oven to cook for 35 minutes, they should just be cooked lightly and still hold a bit of texture
  6. Serve as they are or with a light salad
