Christmas vegan fruit mince pies

These little gems are an awesome little treat at Christmas time. Easy to make and go great with a little vanilla bean custard. 





Shortcrust pre rolled vegan pastry 2 sheets

Fruit filling 

1 green apple grated

¼ cup currants

¼ cup silvered almonds

1/4 cup sultanas 

¼ cup  chopped pitted prunes

¼ cup dried cranberries 

1/4 cup pineapple diced small 

1/2 cup orange juice

1 teaspoon ground glove spice 

1/2 teaspoon nutmeg

1 teaspoon cinnamon 

1 teaspoon vanilla extract



  1. To make the fruit mince filling, place all fruit, spice and juice in a large bowl and let marinate overnight in the fridge
  2. After its had 24 hours to soak
  3. Preheat oven to 180°C 
  4. Cut pastry into circles to fit inside muffin tin rounds. Then using your hands work the pastry so they are all snug and fit the tin well
  5.  Then spoon in the filling
  6. You can cut extra shapes from the left over pastry and place on top 
  7. place in the oven and bake 25 to 3o minutes until golden brown
  8. Then remove and cool on racks
  9. Best served warm with your favourite custard
