Well its the first week of September and its still freezing in Perth and spring has definitely not come yet 🙁 I live in the hills Roleystone and although its gorgeous with all the rain, its not motivating or inspiring me to get busy in or around the house. So what better time to bake then when its raining!
I decided to make a mixed version of my favourite banana and maple bread, which you can find in the recipe section. And I wanted to tweak it up with some chocolate. Now I must admit I’m not a fan of chocolate…. but this recipe is so damn good! Its definitely converting me to chocolate. These little guys are so good warm straight from the oven or cool later in the day. You could easily serve these with a scoop of vanilla ice cream warm and they would be a to die for dinner dessert!! Actually now that I mention it… I’m totally going to do this

Chocolate Banana & Blueberry Cakes
Makes: 6 mini loafs /cakes
Prep Time: 20 minutes
Cook Time: 1hr minutes
Skill level: Easy
2 ripe bananas mashed well with a fork
75g nuttellex butter
3/4 cup water
1 tsp apple cider vinegar
1/4 cup + plus 2 TBSP maple syrup
1/2 cup fresh blueberries
3/4 cup self raising flour
1 tsp baking powder
1/4 cup cacaco powder
1/4 cup coconut sugar
Start by creaming your butter and sugar together in a large bowl, mix until nice and smooth. Then place all remaining wet ingredients in a large bowl and mix together until you have a nice smooth ish batter. There may be some little lumps from the butter, don’t worry about this too much. Now add all your dry ingredients and mix well, you should now have a nice thick cake batter. If it looks a little dry or too wet you can add more water or flour to adjust.
Pour into a oiled mini loaf pan or cake tray. (I used a mini 6 loaf tray) Then place in a pre heated oven 160 degrees and bake for 50 minutes or until wooden skewer comes out clean from centre of cake.
Place out on a cooling rack until cool and enjoy !
