Cheesy Vegan kale chips

 

Ingredients 

1 large bunch of green kale

1 cup soaked cashews

¾ cup roughly chopped bell pepper

1 tablespoon lemon juice

1 tablespoon nutritional yeast

½ teaspoon of salt

Method 

  1. Place the following ingredients into a high speed blender – cashews, bell pepper, lemon juice, nutritional yeast, and salt until smooth
  2. Now de-stem your kale and rip into chip size pieces – set to side 
  3. Get out a large mixing bowl and place your kale into that
  4. Pour the coasting over the kale and thoroughly massage the kale using your hands until its coated well
  5. Using a dehydrator set at 115ºF overnight or until chips are dry and crisp
  6. Turn your kale over during the dehydration process to ensure it dries nice and even  

Flavour Options 

Spicy Chipotle:  Add chipotle powder and some red pepper flakes, or cayenne kick

Curry:  Use some blended carrot juice in place of the red capsicum, add curry powder, ginger, 1 teaspoon of 

maple syrup and as much spice as you like

Italian: Substitute sun-dried tomatoes for the red capsicum and add fresh herbs like thyme, oregano,

and basil
