Vegan Buckwheat Granola

Vegan Buckwheat Granola 

Makes: 1 large canister 

 Prep Time: 15 minutes

Vegan buckwheat granola


4 cups of sprouted buckwheat 

1 large orange 

1/2 cup of chopped brazil nuts 

1/2 a cup of goji berries 

1/4 cup of maple syrup 

2 bananas 

1/4 cup pumpkin seeds 

1/4 cup of pistachios chopped 

2 tablespoons of cinnamon 


  1. Using a large mixing bowl add in the buckwheat, nuts, maple syrup, goji berries, bananas and cinnamon
  2. Using your hands mash the bananas through the mixture, now add in the juice from the orange and mix well
  3. At this stage, you should have a beautiful combination that sticks together loosely 
  4. If you have a dehydrator place the buckwheat on a sizeable flat ray and spread out to a nice even layer. around 1 to 2 cm thick
  5. Dehydrate for 48 hours on 45 degrees. Halfway through you can mix and break up the granola, so you have some clusters pieces
  6. After your granola has been drying for 48hours remove and let sit on the bench for 1 hour before placing in an airtight container to store
  7. Vegan granola should last up to 4 weeks in an airtight container if dried correctly
