Tofu Breakfast Scramble

Who doesn’t love a good warm savoury breakfast! This tofu scramble is the closest to eggs I have found and if you ever see black salt. You can add it to the recipe for an extra eggy flavour. Tofu is loaded with protein and calcium making a perfect daily starter!
Ingredients
250g of organic medium tofu
1 cup of mixed mushrooms chopped small
2 tablespoons of nutritional yeast
1 green onion sliced fine
1/2 a cup of chopped herbs, I love coriander
1 teaspoon of paprika
1 teaspoon of garlic powder
1/2 teaspoon of turmeric
1 teaspoon of coconut oil
Pinch of salt and pepper to taste
Method
1. Start by heating a large frying pan with coconut oil on medium heat
2. Add the mushrooms, green onion and cook for a few minutes until they start to turn golden
3. Now add all the dry spices, nutritional yeast and fry off for another minute until nice and golden
4. Once golden add the tofu to the pan by crumbling it in your hands straight into the frying pan
5. It should look like scrambled eggs, then stir gently until it’s all combined
6. Cook a further few minutes to help reduce the liquid in the pan
7. Once cooked, add in the fresh herbs and serve with your favourite vegan seeded toast
Tips
Once cooked you can remove your tofu from the heat and
place in a strainer, over a bowl to catch any excess liquid
You can add the scramble and strainer to a warm oven to keep warm while you toast your bread and let the excess liquid drain from the scramble
