Blueberry Pikelets

Serves: 2 to 4 

Difficulty: Easy 

Time: 15 minutes 

These blueberry pikelets are little cloud-like mini pancakes the whole family will love! And they make a great afternoon tea snack too. This simple recipe is one I veganised and replaced the dairy element with nut milk. It is simple to make and great for everyone in the family


Recipe for blueberry pikelets 


1 cup of SR flour or gluten free 

1 teaspoon of baking powder 

1/2 cup of blueberries

1 1/4 cups of cashew milk or any other 

2 teaspoons of maple syrup 

Vegan butter to cook with – 3 or 4 teaspoons 


  • Start by placing the flour, baking powder, syrup and milk into a large bowl 
  • Mix well until you have a nice thick batter – like cake batter 
  • Then add berries and lightly stir through, set to the side for 15 minutes
  • While resting, heat a large non stick fry pan on medium heat, add 1 teaspoon of vegan butter and coat pan
  • Then add 2 tablespoons of batter per pikelet, you should fit around 4 per cook
  • Cook for 3 to 4 minutes per side
  • Serve with fresh coconut cream, fresh berries and maple syrup
